Roasted Portobello Mushrooms

Portobello mushrooms are delicious any way they are made but roasting them in olive oil and herbs magnifies their goodness by 1000!

Ingredients
  • 2 portobello mushrooms wiped clean
  • 1/2 cup of chopped parsley
  • 3-5 garlic cloves minced 
  • 1 tablespoon shallot minced
  • 1/2 cup of olive oil
  • salt and pepper to taste
Directions

Preheat your oven to 350. Clean and slice your mushroom lengthwise into 1/2 inch slices and set aside.

Chop up your parsley, garlic, and shallots.

In a small bowl combine your chopped parsley, garlic, shallot, olive oil, and salt and pepper and mix.

Dunk each slice of portobello mushroom into the mixture. 

Lay out flat on a baking sheet and bake for 25 minutes. Take them out of the oven, flip them over, and bake for an additional 5-10 minutes. 

Enjoy these on their own or pair them with my Lebanese Beef Sliders.
